Leftover Turkey and Cheesy Rice Skillet Nachos

Y’all, I’ve got the best recipe for using up that leftover turkey from the holidays. This Leftover Turkey and Cheesy Rice Skillet Nachos recipe will make you as happy as the pardoned Thanksgiving turkey from the White House.  

Layers upon layers make these nachos great. All you have to do is grab a cast iron skillet, a bag of Riceland Long Grain Rice, and some leftover turkey. Now you are ready to create the best leftover turkey meal ever.

This recipe can just as easily be made on a sheet pan. Shh..our little secret…skip the chips and use these ingredients in corn or flour tortillas to make some amazing enchiladas or burritos.

If it’s not the holiday season when you find this recipe…that’s ok too. Grab a rotisserie chicken to substitute the turkey. It’s a great recipe for New Year’s Eve, the Super Bowl, and literally any fun night in. I make this recipe when I want to play board games with my family or want to relax on movie night. 

My favorite thing about this recipe…I can make up the basics and let everyone in the family decide what toppings suit them. The hubby brings on the heat. Chopped jalapenos just for him. I love olives! Yep…a bowl of sliced olives just for me. Grab an onion, an avocado, some cilantro, and maybe a tomato. The sky is the limit when it comes to this dish. Make it the way you like it!

Leftover Turkey and Cheesy Rice Skillet Nachos

Ingredients

  • 3 cups cooked Riceland Long Grain Rice
  • 4 cups shredded cooked turkey
  • 1 24-ounce jar salsa
  • 1 15.25-ounce can corn, drained
  • 1 15.25-ounce can black beans, drained
  • 1 cup sour cream
  • 4 cups shredded cheese, divided
  • 2 teaspoons cumin
  • Salt and pepper
  • 1 large bag tortilla chips

Toppings

  • Cilantro, chopped
  • sliced avocado, optional
  • sliced olives, optional
  • sliced jalapeno, optional
  • diced tomatoes, optional
  • diced onion, optional

Directions

Cook rice according to package directions. Preheat oven to 350 degrees. In a large bowl add cooked turkey (or chicken), salsa, corn, beans, sour cream, 2 cups cheese, seasonings, and cooked rice. Stir until well combined. Layer skillet (or sheet pan) with tortilla chips. Evenly spread rice and turkey mixture over chips. Sprinkle 1 cup shredded cheese over the top of rice mixture. Repeat second layer. Bake for 20 to 25 minutes or until heated through and the cheese is melted. Sprinkle with optional ingredients or let individuals sprinkle their favorite ingredients onto their perfect bite.
