8 slices bread, buttered, crusts removed 3 cups chopped cooked chicken 1 can (4 oz.) sliced mushrooms 2 cups cooked Riceland Gold Perfected Rice 2 cups grated process American cheese 1/2 cup salad dressing 4 eggs 1 1/2 cups milk 1 jar (2 oz.) pimento 1 can (10.75 oz.) cream of mushroom soup
Line bottom of 9x13-inch baking dish with buttered bread slices. Combine chicken, mushrooms, rice and cheese; spoon over bread slices. Combine remaining ingredients and pour over all. Bake in 350F oven for 35-45 minutes. Makes a great luncheon entree! (From our "Golden Fork Classics" cookbook)
