3 cups cooked Riceland Natural Brown Rice 1 egg, beaten 2/3 cup grated Swiss cheese 2 Tbsp. butter or margarine 2/3 cup chopped onion 2 Tbsp. all-purpose flour 1-1/2 cups half-and-half cream 3 eggs, beaten 1/2 tsp. salt 1/4 tsp. cayenne pepper 1/4 tsp. paprika 5-6 slices bacon, cooked and crumbled* 1 pkg. (10 oz.) frozen chopped broccoli, thawed and drained* 4 slices Swiss cheese
* You may substitute ham or sausage for bacon and zucchini for broccoli.
In bowl, combine rice, egg and 2/3 cup Swiss cheese. Press onto bottom and sides of greased 10-inch pie plate, forming a crust. In small saucepan over medium heat, melt butter. Add onions; saute' until tender. Add flour and blend well. Gradually add one cup of half-and-half, stirring until thickened. Remove from heat; set aside. In bowl, combine eggs, 1/2 cup half-and-half and seasonings. Stir into thickened sauce. Spread bacon and broccoli on top of rice crust. Cover with sliced Swiss cheese. Pour sauce over cheese. Bake at 350F for 45-50 minutes. (From our "America's Kitchen" cookbook)
