2 Tbsp. vegetable oil 1 large onion, sliced 1 cup Riceland Extra Long Grain Rice 1 pint chicken stock 1 pkg. (8 oz.) frozen mixed vegetables 1 tsp. dry mustard Pinch saffron Salt and pepper 8 oz. cooked chicken, in bite-size pieces 8 frankfurters, in 1-inch slices
Heat oil in saucepan and saute onions until soft. Add rice and saute 2 minutes. Add stock, vegetables, mustard, saffron, salt and pepper to taste. Bring to a boil and stir once. Lower heat to simmer. Cover and cook 12 minutes; add chicken and frankfurters. Continue cooking 3 minutes, or until rice is tender and liquid is absorbed. (From our "Wonderful World of Riceland Rice" cookbook)
