When the weather is cold, and you have a busy day, there’s nothing better than pulling out your slow cooker. This Slow Cooker Italian Chicken and Rice is the perfect busy weeknight recipe. Add some leafy greens to a side salad and some garlic bread. You’ve got yourself a quick and easy meal.
Do you consider your slow cooker a staple appliance in your house like I do? I can’t live without mine. I have this cabinet above my refrigerator that has these wide-open shelves. It’s the only cabinet in my kitchen that can house my big slow cooker. Week after week, during the winter, you will here me calling to my husband….”Hey honey, can you get the slow cooker down?” Did I mention that I’m super short?! Thank goodness, my hubby is tall. No ladder needed.
On this particular day, I call to my hubby to get the slow cooker down so I can make an oldie but goodie. It consists of easy ingredients that can be put in the slow cooker and cook all day until tender and moist. In the evening, I throw on a pot of rice, mix up a salad, and bake up some bread. Twenty minutes and done. I would say it will take longer to wash the dishes after this meal, but you won’t even have a lot of dirty dishes to deal with.
With this recipe, I really love to pour the creamy Italian chicken over my rice then mix it all together and dig in. Some freshly grated Parmesan cheese sends it over the top. The ingredients will out way the directions for this easy Slow Cooker Italian Chicken and Rice.
Slow Cooker Italian Chicken and Rice
- 4 boneless, skinless chicken breasts
- 1 can (10 ½ ounce) cream of chicken soup
- 1 can (10 ½ ounce) cream of mushroom soup
- 1 8 ounce package cream cheese, softened
- 1 .7 ounce package Italian seasoning dressing mix
- 2 4 ounce cans sliced mushrooms
- 1 medium onion, chopped
- 2 cloves garlic, minced
- chopped fresh parsley
- 3 cups cooked Riceland Long Grain Rice
- salt and pepper to taste
Place chicken in a slow cooker. Combine soups, cream cheese, Italian seasoning, mushrooms, onion, and garlic in a large bowl. Pour over chicken. Cook on low for 8 hours. Add salt and pepper to taste. Pour slow cooked chicken mixture over rice in a bowl.
