Spicy Spinach Rice

Does the thought of eating spinach cause a raucous at dinner time? This Spicy Spinach Rice dish will cure that! There’s no denying it’s leafy appearance but paired with cilantro and jalapeños, it’s an easy and delicious meal everyone will love. And, unless your kids are asking what the name of it is, you don’t even have to say it’s spinach. Alternate name: Spicy Tex Mex Rice.

Whatever you call it, this dish can be customized to your liking. Make it more or less spicy by adding or removing the jalapeños. Throw in whatever chopped vegetables you may have in the refrigerator. With just 8 ingredients, it can be made quickly on a weeknight and keeps in the ‘fridge well for leftovers and nibbling for several days. Rice is a wonderful staple to have on hand in your pantry and is an economical way to feed a family.

Spicy Spinach Rice fits in perfectly as a vegetarian dish for Meatless Mondays if you use vegetable broth. It can also be made with chicken broth if you have that on hand. The spinach and cilantro meld into flavors that pair well with Tex Mex dishes.

Have you jumped on the meal-prep bandwagon? Rice is a great staple to add to your meal prepping containers. Take some time to make a batch of Spicy Spinach Rice at the beginning of the week. Divide into containers with lids. Place slices of rotisserie chicken on top or cook up flavorful Tex Mex chicken breasts and add those. Top with a salsa, if desired and place lids on containers. Keep in the refrigerator for an already-prepared meal on-the-go. Or, during busy weeks you have dinners or lunches ready to pull out, reheat, plate and eat! You can add your favorite toppings, like sour cream, or taco sauce to jazz them up.

Spicy Spinach Rice


  • 1 ½ cups Riceland Long Grain Rice
  • 3 cups vegetable broth or chicken broth
  • ½ pound spinach
  • 2 green onions
  • 1 jalapeno pepper
  • handful cilantro leaves
  • 1 clove garlic
  • 1 lime, juiced
  • salt and pepper to taste


Cook rice according to package directions using broth instead of water. Place spinach, green onions, jalapeno pepper, cilantro leaves, garlic, and juice of 1 lime in a food processor and process until finely chopped. Add to cooked rice and mix until well combined. Rice will need to be salted. Add salt and pepper to taste.
