Cookies and Cream Krispie Rice Treats

 

COOKIES AND CREAM KRISPIE RICE TREATS

Ingredients:

  • Nonstick cooking spray
  • 18-20 Oreo cookies
  • 3 Tablespoons unsalted butter, cut into 6 pieces
  • 6 cups mini marshmallows
  • 1 cup mini chocolate chips
  • 4 cups Krispie rice cereal

 

Optional Ingredients for Patriotic Treats Ganache

  • 3 ounce bar quality white chocolate
  • 1/3 cup heavy cream
  • Red, White and Blue sanding sugars

 

Optional Ingredients for Dark Chocolate Ganache

  • 3 ounce bar quality dark chocolate
  • 1/3 cup heavy cream
  • Fresh strawberries

 

Directions

  1. Spray an 8-inch square baking pan with nonstick spray. Crisscross 2 pieces of parchment paper leaving an overhang on all sides to use as “handles.” Spray parchment paper with nonstick spray.
  2. Split Oreos in half. Scrape cream filling into a large microwave safe bowl. Set aside.
  3. Pulse Oreos in a food processor until reduced to fine crumbs; set aside.
  4. Add butter to cream filling and microwave on HIGH in 45 second intervals, stirring after each to combine.
  5. Add marshmallows, tossing to coat with butter and cream mixture.
  6. Microwave in 45 second intervals, stirring after each until marshmallows have melted.
  7. Quickly fold in Krispie rice cereal and Oreo cookie crumbs.
  8. Press mixture evenly into prepared pan.
  9. Cool completely. Cut into 16 equal squares.
  10. To top as Patriotic Treats, prepare white chocolate ganache by heating cream in the microwave for 45 seconds. Crumble white chocolate into hot cream and whisk until smooth. Set aside, whisking every couple of minutes until mixture thickens and is basically cool.
  11. Spoon ganache over treats and sprinkle with sanding sugars.
  12. Note: This amount will cover approximately 9 squares. To cover all, double the ganache amounts.
  13. To top with Dark Chocolate Ganache, prepare ganache by heating cream in the microwave for 45 seconds. Crumble dark chocolate into hot cream and which until smooth. Set aside to cool, whisking occasionally. (If mixture gets to thick add 1-2 Tablespoons warm cream.) Spoon ganache over treats and cool. Top with fresh strawberries, if desired.
