The farmers markets are everywhere and it’s time to make a purchase. This BLT Rice Salad is the perfect way to use up those farmers market purchases!
Every year I take a weekend trip with my girlfriends that’s only about three hours out of town. It’s the perfect quick getaway that gives us a way to reconnect. We love to shop, chill, and eat. It’s the best relaxing weekend of the year.
One of my favorite parts about the trip...I don’t have to cook. Let me just say...I LOVE to cook. But, I cook for my family and I cook for a living, so I do enjoy a few days off cooking on trips.
The dilemma…Have you ever headed back from a weekend getaway and thought, what am I cooking for dinner when I get home? That’s exactly what I thought on the way home from my girl’s weekend getaway years ago.
When an opportunity presents itself, you jump on it! We came upon a smokehouse first. It was an easy decision to make a pit stop because well yes bacon always. We picked up some bacon. Spotted a farm stand next so we grabbed some ripe tomatoes and fresh lettuce. Finally, we spotted a bakery! A nice crusty loaf of bread is a must when making a BLT. That’s all it took to know I was making a quick and easy BLT for dinner that night and every year after. The stops you can make on the way home to round out a trip??? That’s why I love food!
My love of a classic BLT and this trip have me recreating the Bacon Lettuce Tomato Sandwich in different ways. This amazing BLT Rice Salad is just another way to relive both all summer long and all year long for that matter.
BLT Rice Salad
- 3 cups cooked rice, cooled
- 1/2 cup zesty Italian dressing
- 1/2 cup ranch dressing
- 1/2 pound cooked bacon, chopped
- 1 large tomato, diced
- 1 heart of Romain lettuce, chopped
- 1/4 cup red onion, diced
- Salt and pepper to taste
Mix all ingredients until well combined. Serve cold. Eat and enjoy!
