4 crappie filets (or other white fish fillets)
2 squash, sliced
2 zucchini, sliced
2 tablespoons Riceland Rice Bran Oil
¬º cup Riceland Whole Grain Seasoned Fish Breading
2 tablespoons parmesan cheese, grated
2 tablespoons butter, melted
fresh parsley, chopped
salt & pepper, to taste
Preheat oven to 450 degrees.
Toss sliced squash and zucchini in a bowl with oil, salt, and pepper. Alternate squash and zucchini slices in 2 rows on baking sheet.
Sprinkle salt and pepper on fish fillets. Top sliced veggies with a fish fillet. Repeat 3 more times.
Mix fish breading, parmesan, and melted butter in a small bowl. Divide breading mixture and top each fillet.
Bake uncovered for 25 minutes. Sprinkle with fresh parsley.
