Hot Chicken Salad with Brown Rice

Ingredients:

3 cups Riceland Medium Grain Brown Rice, cooked
2 ½ cups diced, cooked chicken
2 cups diced celery
¼ cup diced onion
¼ cup roasted bell peppers, chopped
1 (10.5 ounce) can cream of chicken soup
1 cup mayonnaise
1 Tablespoon garlic and herbs seasoning
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper

Directions:

Cook rice according to package directions.

Combine all ingredients. Pour into prepared 9X13 baking dish. Cover with foil. Bake at 350 degrees for 45 minutes.

Note: Rotisserie chicken is delicious. Entire chicken may be added to extend recipe.

For added flavor, add a bay leaf to the water when cooking rice. Remove bay leaf after rice is cooked.
