Single Serving Broccoli Cheese Brown Rice Cake

The broccoli and cheese are a nod to some of our favorite comfort foods, and the whole dish comes together in 10 minutes flat.

1/2 cup cooked Riceland Whole Grain Natural Brown Rice (white rice works well too)
1 whole egg
1/2 cup finely chopped steamed broccoli
1/2 cup shredded sharp cheddar cheese
1/8 teaspoon salt
1/8 teaspoon onion powder
1/8 teaspoon black pepper
pinch of cayenne pepper

Preparation

  1. Preheat a nonstick skillet over medium heat.
  2. In a bowl combine all ingredients and mix until well incorporated.
  3. Grease the pan as desired with butter, ghee, coconut oil or nonstick spray.
  4. Spoon the mixture into a circle and press into a cake about ¬3/4 inch in thickness.
  5. Allow to cook for about 3-4 minutes on the first side until golden brown.
  6. Carefully flip the cake and cook for an additional 3-4 minutes on the second side, making sure it's browned and cooked through.
  7. Enjoy hot.
