Ingredients
- ½ cup cooked Riceland Long Grain White Rice
- ½ cup broccoli florets (fresh or frozen)
- 1–2 tbsp shredded cheddar or mozzarella
- 1 tbsp water
- Salt & pepper to taste
- Optional: a splash of ranch, nutritional yeast, or diced chicken for protein
Instructions
- In a microwave-safe cup or bowl: Add rice, broccoli, and 1 tbsp water.
- Steam: Microwave 1–2 minutes until broccoli is tender.
- Mix: Stir in cheese until melted.
- Season: Add salt and pepper.
- Serve immediately or portion into small containers for meal prep.
Notes
- Perfect for after-school snacks or quick lunches.
- Add diced leftover chicken to turn it into a full meal.
- Freezer-friendly when assembled without cheese (add cheese when reheating).
