Ingredients:
For the Sushi Rice:
- ️3/4 Cup Sushi Rice, uncooked (1 rice cooker cup)
- ️1 Tbsp + 1 tsp Rice Vinegar
- ️2 tsp Sugar
- ️1/2 tsp Kosher Salt
For the Avocado Cucumber Salad:
- 2 Avocados, diced small
- ️1 Small Persian Cucumber, diced small
- ️1 Scallion, sliced
- ️1 Tbsp Soy Sauce
- ️1 Tbsp Rice Vinegar
- ️2 tsp Sesame Oil
- ️1 tsp Sesame Seeds
For the Avocado Cucumber Salad:
- 3 Packs Roasted Salted Seaweed Snacks
Instructions:
- Cook sushi rice in a rice cooker or on the stove according to package directions
- Whisk together the rice vinegar, sugar, and salt in a small bowl until sugar and salt dissolve, and then mix it with the warm sushi rice
- Mix together the ingredients for the avocado cucumber salad and top with some more sesame seeds for garnish
- Serve the avocado cucumber salad with warm rice and seaweed and enjoy! To eat put a dollop of rice on a piece of seaweed topped by a dollop of the avocado cucumber salad
