Ingredients:
- 4 cups cooked Riceland long grain white rice
- 2 cups prepared BBQ pulled pork
- 1 cup corn kernels
- 1 cup coleslaw mix
- ½ cup BBQ sauce
- ½ cup shredded cheddar cheese
- ¼ cup sliced green onions
- ¼ cup pickled red onions
- ½ cup ranch or chipotle ranch dressing
Instructions:
- Heat pulled pork in a saucepan with BBQ sauce over medium heat until warmed through.
- In a small bowl, toss coleslaw mix with a few tablespoons of dressing.
- Divide cooked rice into 4 bowls.
- Top each bowl with BBQ pulled pork.
- Add corn, slaw, shredded cheese, pickled onions, and green onions.
- Finish with ranch or chipotle ranch dressing.

- Use leftover slow cooker pork for easy meal prep.
