Ingredients:

  • 4 cups cooked Riceland long grain white rice
  • 2 cups prepared BBQ pulled pork
  • 1 cup corn kernels
  • 1 cup coleslaw mix
  • ½ cup BBQ sauce
  • ½ cup shredded cheddar cheese
  • ¼ cup sliced green onions
  • ¼ cup pickled red onions
  • ½ cup ranch or chipotle ranch dressing

Instructions:

  1. Heat pulled pork in a saucepan with BBQ sauce over medium heat until warmed through.
  2. In a small bowl, toss coleslaw mix with a few tablespoons of dressing.
  3. Divide cooked rice into 4 bowls.
  4. Top each bowl with BBQ pulled pork.
  5. Add corn, slaw, shredded cheese, pickled onions, and green onions.
  6. Finish with ranch or chipotle ranch dressing.
