Ingredients
- Brown rice
 - Extra virgin olive oil
 - Red onion
 - Jalapeno
 - Bell pepper
 - Butter
 - Garlic
 - Chili powder
 - Fresh ground pepper
 - Kosher salt
 - BBQ sauce
 - Chicken broth
 - Water
 - Liquid smoke
 - Green onions
 - Cilantro (garnish)
 
Instructions
- Add rice to a large bowl and soak in water for 10 minutes. Drain and rinse the rice and set it aside.
 - Heat a heavy frying pan with a lid over medium heat on your grill or side burner.
 - Once hot, add the olive oil and swirl to coat.
 - Next, add the onion, jalapeño, and bell pepper, and sauté for 3 minutes.
 - Push everything to the sides of the pan to create an empty space in the center. Add the butter and melt.
 - Once melted, add the rice to the pan and let sizzle for 4 minutes. Stir to combine, and sauté for 8 minutes. Add the minced garlic, chili powder, pepper, and salt and stir. Cook for 2 minutes.
 - Next, stir the bbq sauce into the rice. Cook for 3 minutes.
 - Combine chicken broth, water, and liquid smoke in a bowl with a pour spout. Pour over the rice and increase the heat. Cook uncovered until the liquid starts to boil. (About 5 minutes)
 - Once boiling, add the green onions. Stir and cover the pan. Reduce the heat to low.
 - After 15 minutes, remove the cover and stir the rice. Cover and simmer for 3 more minutes, then turn off the heat. Keep the pan on the stove with the lid on until all the moisture has been absorbed. (About 10 minutes)
