Ingredients:

  • 1 cup cooked Riceland long-grain rice
  • 1 can black beans, drained and lightly mashed
  • 1/2 cup breadcrumbs (use GF if needed)
  • 1/4 cup grated onions
  • 2 eggs
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Mini slider buns
  • Optional toppings: guacamole, cheese, salsa, lettuce

Instructions:

  1. Mix rice, mashed beans, breadcrumbs, onion, eggs, and seasonings in a bowl.
  2. Form into 8 small patties.
  3. Heat a non-stick skillet over medium heat and cook patties for 3-4 minutes on each side until golden brown.
  4. Assemble sliders with buns and desired toppings.

Variations:

  • Tex-Mex     Style: Add corn     and chopped jalapeños to the mix.
  • Vegan: Use a flax egg and skip cheese.
  • Crispier Option: Bake or air-fry the patties for a crunchier texture.
