  • 2 lb. boneless, skinless chicken breasts
  • 1 packet ranch seasoning
  • 6-8 pieces bacon, drained & chopped
  • 1 (8-ounce) block cream cheese
  • 1 cup cheddar cheese, shredded
  • 2 cups Riceland Gold parboiled rice
  • 1/4 cup green onions, chopped
  • Buns, optional

Preparation

1) Place chicken breasts in crockpot and sprinkle with ranch seasoning packet. Heat on high for 3-4 hours or low for 6-8 hours.

2) Shred chicken in crockpot, add cream cheese and cheddar cheese. Stir until combined.

2) Cook rice according to package instructions.

3) While rice cooks, fry bacon until crispy, drain and chop.

4) In the crockpot, stir in cooked rice, bacon and green onions.

5) Can serve casserole style or serve on buns.
