Ingredients:
- 3 cups shredded carrots
- 3 cups cooked Riceland long-grain white rice
- 1 1/2 cups shredded cheese
- 1/2 cup milk
- 2 beaten eggs
- 2 Tbsps. Chopped onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup shredded cheese
Instructions:
- Combine first five ingredients, stir in onion, salt and pepper. Pour mixture into a greesed 9x13 pan.
- Sprinkle remaining 1/2 shredded cheese on top.
- Bake at 350 degrees for 50-60 minutes.
Variations:
- Top with your favorite sauce
- Add 1 lb. Chorizo or Italian Sausage to make it a one pan meal
