Ingredients:

  • 2 cups cooked Riceland jasmine rice or long grain white rice
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • ½ tsp mint extract
  • 1 Tbsp bourbon (optional)
  • Pinch salt
Garnish
  • Fresh mint leaves
  • Whipped cream
  • Brown sugar

Instructions:

  1. In a saucepan combine rice, milk, cream, sugar, and salt. Cook over medium heat until thickened, about 15 minutes.
  2. In a bowl whisk egg yolks. Slowly add a ladle of hot rice mixture while whisking.
  3. Pour egg mixture back into saucepan and cook 3–5 minutes until creamy.
  4. Stir in vanilla, mint extract, and bourbon if using.
  5. Spoon into bowls and chill or serve warm.
  6. Top with whipped cream, mint leaves, and brown sugar.

Notes:

  • Serve in mint julep cups for a fun presentation.
  • Add white chocolate chips for extra richness.
  • If avoiding alcohol, substitute bourbon with ½ tsp maple extract.
