Ingredients:
- 2 cups cooked Riceland jasmine rice or long grain white rice
- 2 cups whole milk
- ½ cup heavy cream
- ½ cup sugar
- 2 egg yolks
- 1 tsp vanilla extract
- ½ tsp mint extract
- 1 Tbsp bourbon (optional)
- Pinch salt
Garnish
- Fresh mint leaves
- Whipped cream
- Brown sugar
Instructions:
- In a saucepan combine rice, milk, cream, sugar, and salt. Cook over medium heat until thickened, about 15 minutes.
- In a bowl whisk egg yolks. Slowly add a ladle of hot rice mixture while whisking.
- Pour egg mixture back into saucepan and cook 3–5 minutes until creamy.
- Stir in vanilla, mint extract, and bourbon if using.
- Spoon into bowls and chill or serve warm.
- Top with whipped cream, mint leaves, and brown sugar.
Notes:
- Serve in mint julep cups for a fun presentation.
- Add white chocolate chips for extra richness.
- If avoiding alcohol, substitute bourbon with ½ tsp maple extract.
