Apple Pie Filling Ingredients:
- 1 1/2 lb. apples, sliced and peeled
- 2 Tbsp. lemon juice
- 3/4 cup packed brown sugar
- 1/4 cup butter
- 1/4 cup water
- 2 tsp. vanilla extract
- 1 1/2 tsp. ground cinnamon
- 1 pinch salt
- 2 Tbsp. cornstarch
Apple Crisp Ingredients:
- 2 cups cooked Riceland long-grain white rice
- Apple Pie Filling (see ingredients above)
- 1 Tbsp. lemon juice
- 1 cup brown sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 3/4 cup flour
- 6 Tbsp. butter
- 1/2 chopped nuts
Apple Pie Filling Instructions:
- Toss apple slices in lemon juice and set aside.
- In a large pan, over medium heat, melt butter.
- In a separate bowl, whisk water and cornstarch together to avoid clumping
- Once butter is melted, add brown sugar, vanilla, cinnamon, salt, and water/cornstarch mixture.
- Mix until well incorporated and add apples.
- Cook for 5-7 minutes until mixture begins to thicken and apples slightly soften. Remove from heat.
Instructions:
- Combine rice, apple filling, lemon juice, 1/2 cup brown sugar, cinnamon and salt in greased shallow baking dish.
- In a separate bowl, mix flour and remaining brown sugar.
- Cut in butter until mixture is crumbly. Stir in nuts.
- Sprinkle over rice-apple mixture.
- Bake at 350 degrees for 30 minutes.
- Serve warm with ice cream.
