Ingredients:

  • 2 cups cooked Riceland jasmine or long grain white rice, cooled
  • 1 baguette, sliced into ½-inch rounds
  • 2 Tbsp olive oil
  • 1 cup ricotta cheese
  • 1 ½ cups fresh strawberries, diced
  • 2 Tbsp balsamic glaze
  • 1 Tbsp honey
  • ¼ cup fresh basil, thinly sliced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions:

  1. Preheat oven to 375°F. Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 8–10 minutes until golden.
  2. In a bowl, lightly season cooked rice with a pinch of salt and pepper. Add softened ricotta cheese and mix.
  3. In another bowl, combine strawberries, balsamic glaze, honey, and basil. Toss gently.
  4. Spread a layer of ricotta rice mix on each toasted slice.
  5. Add strawberry mixture on top.
  6. Drizzle with extra balsamic glaze and garnish with basil.

  • Add prosciutto for a sweet-savory twist.
  • Use whipped ricotta for a lighter texture.
