Ingredients:
- 2 cups cooked Riceland jasmine or long grain white rice, cooled
- 1 baguette, sliced into ½-inch rounds
- 2 Tbsp olive oil
- 1 cup ricotta cheese
- 1 ½ cups fresh strawberries, diced
- 2 Tbsp balsamic glaze
- 1 Tbsp honey
- ¼ cup fresh basil, thinly sliced
- ½ tsp salt
- ¼ tsp black pepper
Instructions:
- Preheat oven to 375°F. Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 8–10 minutes until golden.
- In a bowl, lightly season cooked rice with a pinch of salt and pepper. Add softened ricotta cheese and mix.
- In another bowl, combine strawberries, balsamic glaze, honey, and basil. Toss gently.
- Spread a layer of ricotta rice mix on each toasted slice.
- Add strawberry mixture on top.
- Drizzle with extra balsamic glaze and garnish with basil.
