1/4 cup butter

3 cups mini marshmallows

1/2 teaspoon lemon extract

1 lemon, zested

1 cup freeze dried strawberries, divided

4 cups crisped rice cereal

Preparation

  1. Line a 8x8-inch pan with parchment paper.
  2. Finely zest 1 lemon
  3. Using a food processor, crush 1/2 cup freeze dried strawberries
  4. In a large saucepan, melt butter over medium heat.
  5. Once butter is melted, add mini marshmallows and reduce heat to low.
  6. One marshmallows are melted and mixture is smooth, add lemon extract, crushed freeze dried strawberries, and lemon zest then remove from heat.
  7. Add crisped rice cereal to melted marshmallow mixture and combine until evenly coated.
  8. Pour mixture into prepared pan. Lightly press bars until even and top with remaining 1/2 cup of freeze dried strawberries.
  9. Let pan set at room temperature until completely cooled.
