Tuscan Rice & Beans

Tuscan Rice & Beans dish


1 Tbsp. butter or margarine
1 cup chopped onion
1 cup uncooked Riceland Extra Long Grain Rice
2-1/2 cups chicken broth
1 can (15 oz.) Great Northern beans, rinsed and drained
1 tsp. dried basil leaves
1/2 cup grated fresh Parmesan cheese
1/4 cup chopped parsley
1/4 tsp. black pepper


In medium saucepan, melt butter. Cook onion in butter over low heat until golden brown, about 7 minutes. Stir in rice, chicken broth, beans and basil. Bring to a boil and reduce heat to simmer. Cover and cook 15 minutes or until rice is tender. Stir in remaining ingredients.
