Basil Chicken Salad appetizer


3 cups cooked Riceland Natural Brown Rice
1 cup cooked, cubed chicken breasts
1 cup tiny frozen peas, thawed
1/4 cup finely chopped red onion
2 Tbsp. chopped fresh basil or 1 tsp. dried basil

3-4 Tbsp. vegetable oil or olive oil
2 Tbsp. fresh lemon juice or wine vinegar
1 clove garlic, minced
1 tsp. prepared mustard
1/2 tsp. salt
1/4 tsp. black pepper


In bowl, combine rice, chicken, peas, onion and basil. In cup whisk oil, lemon juice or vinegar, garlic, mustard, salt and pepper until blended; toss with rice salad. Serve immediately.
