Brown Rice Breakfast Casserole dish


1 lb. hot sausage
3 tablespoons butter
1 medium onion, chopped
1 small green bell pepper, chopped
2 cups cooked Riceland Natural Brown Rice
5 eggs, beaten
½ cup milk
1 can cream of mushroom soup
2 cups shredded American processed cheese product
1 teaspoon dry mustard
½ teaspoon salt
½ teaspoon pepper


  1. Brown sausage until cooked through. Pour off grease, and set sausage aside.
  2. Melt butter in skillet, sauté onion and green bell pepper until tender. Add browned sausage.
  3. Combine rice, eggs, milk, soup, cheese, dry mustard, salt and pepper. Add cooked onion, bell pepper and sausage. Mix well.
  4. Pour into prepared 9x13 inch casserole dish. Bake at 350 degrees uncovered for 35-40 minutes until set.
