Cajun Sausage & Rice

Cajun Sausage & Rice dish


1 cup Riceland Gold Parboiled Long Grain Rice
8 oz. sliced smoked link sausage
1 cup frozen onion pepper blend 
2 cups frozen sliced okra
1 can (16 oz.) whole tomatoes
1 can (10.75 oz.) chicken broth
2 cups water
1 tsp. sage
1 tsp. hot sauce
1 bay leaf
Salt and pepper to taste


In large pan, saute smoked sausage, onion and pepper blend until vegetables are slightly softened.  Combine remaining ingredients. Bring mixture to a boil; cover, reduce heat and simmer 20 minutes. Remove lid, remove bay leaf and simmer additional 5-10 minutes.

Chef's Note:
Riceland Extra Long Grain Rice is a good choice for this dish also.
