Spicy Spinach Rice

Spicy Spinach Rice dish


1 ½ cups Riceland Long Grain Rice
3 cups vegetable broth or chicken broth
½ pound spinach
2 green onions
1 jalapeno pepper
handful cilantro leaves
1 clove garlic
1 lime, juiced
salt and pepper to taste


  1. Cook rice according to package directions using broth instead of water.
  2. Place spinach, green onions, jalapeno pepper, cilantro leaves, garlic, and juice of 1 lime in a food processor and process until finely chopped.
  3. Add to cooked rice and mix until well combined. Rice will need to be salted. Add salt and pepper to taste.
