Air Fried Ground Beef and Rice Empanadas

Featuring Rice ‘N Easy Yucatan Arroz Rojo Rice, these empanadas combine flavor and convenience!


For the crust:

6 Tablespoons water

2/3 C. Riceland Rice Bran Oil

2 ½ C. all-purpose flour

1 teaspoon salt

For the filling:

1 lb. ground beef

2 tablespoons taco seasoning mix

1 package Rice ‘N Easy Yucatan Arroz Rojo Rice


Add all of the ingredients for the crust into a bowl and mix until well combined. Set aside.  

In a sauté pan on medium-high heat, add the ground beef and taco seasoning. Sauté until the meat is cooked throughout, about 7-10 minutes. Add in the rice. Stir until combined and rice is heated through. Set aside.  

Roll out small rounds of dough to create a thin round. Spoon 2-3 tablespoons of filling onto one side of the dough. Fold the dough over and press to close. Take a fork around the edge to crimp shut.  

Place two empanadas into the air fryer. Set temperature to 400 degrees and cook for 8 minutes, until empanadas are golden brown. Repeat until all empanadas are done.  

Serve with your favorite toppings like salsa, guacamole or sour cream.
