Apple Pecan Rice Slaw

Apple Pecan Rice Slaw appetizer


2 cups cold cooked Riceland Natural Brown Rice
2 cups packaged cabbage coleslaw mix
1 cup chopped, unpeeled apple
1/4 cup toasted, chopped pecans
1/3 cup frozen orange juice concentrate, thawed and undiluted
1/3 cup fat-free mayonnaise or salad dressing
2 tsp. sugar
1/4 tsp. salt


In large bowl, combine rice, coleslaw mix, apple and pecans. In small bowl, gradually stir orange juice concentrate into mayonnaise; blend in sugar and salt. Add mayonnaise mixture to rice mixture; mix well. Cover and refrigerate at least 1 hour or up to 8 hours. (From our "Rice Sensations" cookbook)
