1 pound breakfast sausage
1/2 cup Riceland Extra Long Grain Rice
1 cup water
1/2 tablespoon butter
1/2 cup shredded cheddar cheese
12 medium shrimp
Cajun seasoning, to taste

Preparation

  1. Preheat oven to 450 degrees. Divide sausage in 12. Mold sausage in 12 muffin tins. Bake for 25 minutes or until done. In the meantime, combine rice, water, and butter then bring to a boil over high heat. Reduce heat to simmer. Cover with a tight fitting lid and simmer for 15 minutes. Once the rice is cooked, add Cajun seasoning to taste and shredded cheese. Stir until well combined.
  2. While rice cooks, skewer shrimp seasoned with Cajun seasoning, and grill over medium high heat until cooked through for 3 to 5 mins or until done.
  3. Top each cooked sausage cup with 1 tablespoon of cheesy rice mixture then add a shrimp skewer. Eat and Enjoy!
