Ingredients
- 2 ripe avocados, peeled, seeded and chopped
- 2 jalapenos, seeded and finely chopped
- 1 tomato, seeded and finely chopped
- Juice from 1 lime
- 1/2 red onion, very finely chopped
- 2 cloves garlic, finely minced or grated
- 1 cup cooked Riceland Parboil Gold
- salt and pepper to taste‚ fresh chopped cilantro (optional)
- shredded lettuce (optional)
Preparation
- Gently combine all ingredients, except lettuce, in a large bowl until well combined.
- Serve atop shredded lettuce, if desired.
- Other serving options include as a dip for corn chips, in a burrito bowl, as a spread in a sandwich or wrap, or with a spoon.
