- 1 cup diced fresh peaches
- Mini tartlet shells
Instructions:
- In a saucepan, combine rice, milk, sugar, vanilla, and cinnamon over medium heat. Simmer for 10 minutes until thickened.
- Fold in diced peaches and cook for another 2 minutes. Let cool slightly.
- Spoon pudding into tartlet shells. Chill for 1 hour.
- Top with whipped cream or a peach slice if desired.
