Rice Salad Italiano

Rice Salad Italiano dish


3 Tbsp. wine vinegar
1/4 cup vegetable oil
1/4 tsp. Italian seasoning
2 green onions, chopped
1/4 tsp. seasoned salt
4 cups cold cooked Riceland Gold Perfected Rice
1/2 cup sliced ripe olives
1-1/2 cups grated Mozzarella cheese
3 cups torn romaine or leaf lettuce


Combine vinegar, oil, Italian seasoning, onions and seasoned salt. Pour over rice; mix well and chill. Just before serving, toss with ripe olives, Mozzarella cheese and lettuce. Serve with cheese or crackers for a quick cool lunch! (From our "Golden Fork Classics" cookbook)
